Concert Nights: Restaurant will stay open until 11:00pm and Room Service until 12:00am


 One of Calgary’s new coming culinary talents and homegrown chefs are ready to take over the lead as Executive Chef of Grey Eagle Hotel operations in Calgary Alberta.

Great tasting food accompanied with guest memorable moments is an essential mandate for the Canadian-born chef. A good portion of his early life was spent growing up in Ontario and Western Quebec on family-run ranches; which has instilled a lifelong passion for fresh locally sourced cuisine. At 14, Bill began cooking for his 3 brothers and mother igniting his passion for food, and the smiles that great tasting food inspired.

With these two passions serving as a foundation early in Bills life, it wasn’t a surprise that he found himself working in his first restaurant at the age of 15. Wanting to learn everything, Bill started in dish and quickly began to excel in the restaurant industry. The drive to learn kept him hungry and he quickly progressed through the entire kitchen learning and always wanting to make things better. By the age of 17, Bill had progressed to taking his first Junior Sous Chef role in Ottawa, and First Head Chef role by the age of 18. Bill began his culinary training at Le Cordon Bleu in Ottawa, and with that culinary foundation, travelled as an apprentice honing new skills in Australia, Japan, New Zealand, Germany, Italy, and Prague.

“Food is a magical ingredient to happy memories” Chef Bill States and this is a sentiment that is echoed and shared in every part of the world. “What we do is important to us, and who we do it for is important to everyone”

In 2014 Bill moved to Calgary to make a new exciting start with his wife and newborn daughter (now three). Bill is absolutely thrilled to join The Grey Eagle Hotel and Resort to work with a fantastic team that is so loved and established within the community. “It is a fantastic opportunity to work with an incredibly talented team from front to back, I can’t wait to be a part of the creative vision help guiding us into the future” Chef Bill Said.

When the apron comes off Chef Bill spends his time being a highly accomplished martial artist and personal trainer, doing anything of the sportive or athletic nature, and most of all spending time with his family. Chef Bill is extremely passionate about making a difference in Calgary’s culinary cuisine through the impact of food and personal guest memories. “if it is important to you, it is, of course, important to me, so let’s create some great tasting food and memories that last forever.”
